Great Book, and Much Cheaper Than The "College Version"

I am in culinary school and this is the required text for our classes. After hours of researching online, and even taking the time to call the publisher, I finally decided to take a risk by buying this "Trade" version rather than the "College Version," offered here on Amazon and in our school's bookstore. Rest assured! This book is EXACTLY the same as the "College Version," but it doesn't include the CulinarE Companion CD (which our school does not utilize anyway)! I even had the instructors at school ask the publisher about the differences, and they admitted that there are none! All of the recipes and page numbers match up identically. Save yourself the $36+ dollars and buy this version instead of getting ripped off by a marketing scam to get more money out of students by calling a book the "College Version" - I'm glad I did!

We are just getting into the book, so I can't offer too much of an opinion, but from what I've seen so far, I'm impressed! I just wanted to add my review so that hopefully another student like myself can save some money. I hope it helps!

A superb learning tool and reference

I grew up with great home cooking and always took it for granted. When I went off to University I quickly realized that Macaroni & cheese would not do me the way it seemed to for many of my colleagues, so I set out to bolster my impoverished culinary skills. After several years of over-the-phone consultations with mom, experimentation, and generally bland meals, I still lacked the basic knowledge and skill to tackle any but the most detailed recipes, and I had more questions than answers. Then I stumbled upon Wayne Gisslen's "Professional Cooking 4th Ed." The standard text for many culinary schools, Gisslen's well organized text book is a must for the aspiring amateur home chef. Expertly laid out and documented with beautiful photography, it will take your cooking to the next level. Gisslen has structured his book to first provide you with an in-depth knowledge of ingredients and basic cooking techniques, these are then applied in the many exquisite recipes that follow. For example, chapter 10: Understanding Meats has subsections on: Composition, Structure and Basic Quality Factors; Understanding the Basic Cuts; Cooking and Handling Meats. The following chapter then applies these principles in recipes grouped according to cooking method. The recipes range from fairly simple to more involved and all the ones I've tried have been outstanding. ONE WORD OF CAUTION! This is NOT a step-by-step cookbook that the beginner cook can just pick up to whip up a meal on the spur or the moment. All the recipes require knowledge of the basic cooking techniques which are covered in the previous chapter(s). This is an amazingly in-depth text book and requires time spent in careful study. Also, since the recipes are scaled for the professional kitchen one must scale them down for personal use (covered in chapter 5). However, if you are willing to put the time in, you will be amazed at how much you learn. As your basic skill level increases so will your confidence for tackling previously intimidating recipes. This book will be a treasured resource on my shelf for years to come. A must for the professional as well as the amateur enthusiast and well worth the money.

Best in the field

With each edition I can hardly imagine how the next one could possibly be any better and this one is no different. This book is the standard issue book at many cooking schools. That is actually how I came upon my first copy, from a friend who had finished Chef school and purchased a newer edition.
The illustrations are beautiful and very helpful, the directions clear and concise. Make no mistake, this is a complete cooking school course with everything except the tuition and practice. Starting at the beginning is a good idea because it is laid out like a course. So, it teaches a technique and then from that point forward in the book it refers to the technique. However, with a thorough index it is not a problem to find out where the technique was discussed.
There is no better book to learn professional cooking or just learn the techniques to astound your friends. Thorough and well documented, when it comes to learning professional cooking techniques, this is the book to have.

Required reading for anyone wanting to chelate their child in a nonintrusive way.

My child is diagnosed with PDD-NOS but we just refer to it as non-verbal autism. We have run many labs and have looked at many tests and he has a clear body burden of mercury. We have been to doctors that specialize in removing metals from my child but I was not happy with the potential of redistribution along with other side effects that could be detrimental to him physically. So like other parents of Autistic children I began my research. I wanted a safe way to remove metals from my child and this book is a perfect starting point and an excellent do it yourself guide. It is a book that gives you the facts, it is a book written by parents, it is a book that I wish many other books on Autism would do, it got to the point and fast. It is an incredibly thin volume but it isn't filled with stories, or doctors notes though it does give you citations listed at the back. It follows the Andy Cutler protocol and explains everything you need to know to do it yourself. I won't lie though that this is a doing it for the long haul approach but frankly I would rather do this than cause more damage or deal with regression. The yahoo group that is associated with this book is an absolutely excellent resource. The authors of the book answer your questions promptly and other seasoned parents are so helpful as well. We have been following this book for a month or so and we are seeing small gains already. I wish I had found this sooner because I was dreading the chelation road but knew we would need to do it for my child. This book took out the guesswork and the dread and made it approachable. Highly Highly recommended!

Autism went from 1 in 1000 to 1 in 48 in just a few short years. No hair, blood, urine or stool testing is done to diagnose autism. It's just basically a condition where the cause is unknown and you're told it's not fixable.

But then you realize heavy metals in the child mirror autistic tendencies. And that drives you to dig further and realize sadly that most of these kids are likely just toxic and not autistic.

When I went to school we didn't even have ASD classrooms. Maybe one for every few schools. As a teacher now, they make up for 25% of classrooms. And at the rate autism is growing and not being solved, what will that do to our schools? Will 80% of classes be ASD contained classes before people wake up and dig deeper?

I wish this book was given to every parent who's child is diagnosed with autism. It helps you find out how to test if your child is suffering from heavy-metal toxicity and if so, how to rid the body of it and get your child back.

It's a total game changer. Not to mention it's short, precise and easy to read for parents have a lot of time.

Livy Kowalski is a honey badger shifter that comes from a family of felons. Vic Barinov is a bear-tiger shifter hybrid whose parents help put many of Liz’s family behind bars. The unlikely couple work together to bring the man who killed Livy’s father to justice – the shifter way.

I love Shelly Laurenston. Every time I read her work, I laugh so hard I cry. Seriously, how does she come up with this stuff? Maybe it’s because I’m an animal lover, but I adore all the quirks the different shape shifters have and how they related to the actual animal groups.

One evening I was reading the scene where Livy was jousting. I was laughing so hard I was afraid I was going to wake my family up.

Vic is one of the few people that gets Livy, especially her humor, which I love. Livy like other honey badgers is just mean. The two together are great, complementing each other well.

I love that Laurenston continues to use characters from the previous books, and I enjoy all their goofy conversations. I don’t think I will ever get enough of Dee-Ann Smith’s wolf and Cella Malone’s tiger antics. Plus, the books would not be the same without Blayne, she just so, well, Blayne. Then there are the male lions and their hair. The list goes on.

I’m so glad I discovered Shelly Laurenston years ago. She is one of those authors whose books I reread. If you have never read her work, you have got to do so. Especially if you enjoy laughing.

Possibly The Best Yet (The Most Insane Anyway :)

Livy and Vic are the most unlikely couple I have read about in quite some time, couple that with a plot that had to be hatched in some asylum someplace, a world where mental health is a weakness and you have Shelly Laurenston's latest novel, Bite Me.

I had forgotten how much I liked these novels since it has been a long time since the last one for me, it had me laughing regularly from start to finish but then you have to really love her humor to truly enjoy these novels.

These books are actually supposed to be a paranormal romance of sorts but underneath all that is a story of murder, mayhem, insane relatives, equally insane friends who love you and revenge (I love revenge).

One of the things I do enjoy about this series is that hardly anyone ever goes away, they almost all show up in each book and play a part, some larger than others but all the favorites from past books are usually around (including the Smiths) and this is no exception.

This book was so much fun you hardly notice that there are some serious things going on at times (aside from the romance that takes a back seat many times in this book). Great writing, insane humor that appeals to a lot of people (like me) and a great ending are all trademarks of Shelly Laurenston's books and this one stays true to form. 4.5 Stars and if you ever enjoyed any of her books you WILL enjoy this one.

All kinds of Shiftery goodness!

Ahhh Shelly Laurenston. The woman knows how to write a killer shifter romance that's non-stop fun, totally crazy and absolutely entertaining. I had such a good time Livy and Vic. They're a riot and just perfect together in that wonderfully weird way Laurenston has of mixing personalities and species. This time...a honey badger and a tiger bear. Heh. Gotta love it. I loved their personality differences--Livy's very much a Honey Badger and quick to go off and Vic's so rocking the laid back bear half of himself that loves order and calm. It was so fun watching them tease each other, drive each other a little batty and fall in love with someone who had truly become their best friend. Gah that so makes me go all *girly swoony*.

With deliciously snarky wit, a wonderful friends to lovers romances, drama and a wee bit of danger Bite Me was just an excellent way to end the series. It had me laughing until my cheeks hurt, sighing in shiftery delight and whewboy fanning myself too because Vic? He so brings the heat and sexy.

Note: While a lot of the books in the series really work fine as stand alone books Bite Me...not so much. Pretty much every past character (so it seemed) made an appearance in this one in some way, shape or form and it would be incredibly confusing and I don't really think as entertaining (since you don't know the back stories) if you hadn't read the other books first. So a heads up on that.

I met Al Mahrer 3 Years ago and I did till now 20 - 30 Sessions in the way which is explained in the book. Is is a powerfull way to overcome deep-sitting problems connect with experiences you have in your life.- situations, etc. Exspecially I worked with life-scenes which were very early in my life and I got really released from bad an terible feelings an more and more of my potentalities got developed and still developing.

Good Story, horible conversion to Kindle

It's a good story, shame it was so poorly converted to Kindle. Many misspelled words and as said before hyphens, offsets and font changes when there shouldn't be.

Great book, lousy transformation to Kindle

I love everything Maxim has written and have all his books in hardcopy. Bought the Kindle editions so I could take them with me easily, but the author and publisher, and Amazon, should be ashamed for the lousy job that was done producing the Kindle edition. Haven't yet checked the rest of my Maxim Kindle purchases but can only hope this one is an aberration. To charge more for the Kindle version than the paperback and produce a product with no cover art or TOC, nor the usual credit and other prefatory and concluding matter, and with so many missing words, incomplete words and paragraphs, font and formatting errors is inexcusable. The ebook is well nigh unreadable and sure to turn off a reader new to Maxim's work. I wouldn't be surprised to find out that it was converted to Kindle using a third-rate OCR conversion product from a hardcopy edition. Certainly no human edited the ebook before it was put on sale. SHAME, SHAME, SHAME!!

I am addicted to John Maxim in general and his Bannerman series in particular. They are my candy, escapism and what if all rolled into one. Who hasn't dreamed of having a completely safe haven where one has friends who will keep you totally safe no matter what; where one can pick up on a moments notice, fly off to exotic places and blow away the bad guys. That is exactly what John Maxim creates. Bannerman and his people are the essence of a group of people who take care of their own no matter what. For an evening of enjoyable light reading try any of John Maxims books and in particular his Bannerman series -- you won't be sorry.

When asked about the inspiration for his book, Robert said, "Serafina's journey grew out of my desire to write a story about an unusual and heroic young girl for my three daughters."

Robert Beatty does it again!

I found this series last November, my family and I were planning a trip to Biltmore and Serafina and the Black Cloak came up in a search I did looking for books about Biltmore. I read the book straight through in one evening because I could not put it down! The writing/storytelling style took me back to my childhood, when my dad would tell me bedtime stories. Not only was the story thoroughly enjoyable I loved the insight that it gave into the house, reading the book and then touring the house made the story come alive even more. I applied for the SART (Serafina Advanced Reading Team) and was blessed with an advanced copy of the sequel. It's sequel, Serafina and the Twisted Staff took me on a magical journey back to Asheville, NC with characters that I love and a surprise twist that I never saw coming. In Black Cloak, Serafina discovered the mystery of who she was but as you'll read in Twisted Staff, she wasn't quite finished coming into her own. This book combines self-discovery with the power of friendship and the important life lesson of facing your problems and not running away from them. In Twisted Staff Serafina makes new friends, and enemies; meets with disaster and triumphs in the end; finds her own power, and recognizes the power of her friends. Robert Beatty is an absolute master of his craft combining fantasy with reality and fact with fiction. There's never a dull moment, and I truly felt that I was right there in the story and not just a subtle observer.

PAGE TURNER!

I had the opportunity to be a part of an "advanced reader" group and cannot say enough good things about this book! I was so excited to get to continue the story of Serafina, which I was completely taken in by in "Black Cloak". This book DEFINITELY does not disappoint. It is a total page turner! I realize this is a young readers book and I am a 30-something, but I really feel like it has no age limit. It's entertaining and highly suspenseful. The continuation of Serafina's personal story along with a new adventure were excellent reading. Robert Beatty has done a great job in continuing this saga and I CANNOT WAIT for the 3rd installment. If you liked the first one, I would be HIGHLY surprised if you did not LOVE this one. Serafina has really grown and started to come into her own.

IT COSTS ME twice as much to read Serafina and the Twisted Staff. I purchase one copy for myself, and one copy for my Goddaughter (who is also my niece). But, ssh. She doesn’t know yet, unless she’s reading this. In which case…SURPRISE, BABY GIRL!
